First let me apologize for my lack of recent updates to this site. I have been very busy since my last last one. We have been averaging about 5 events per day and many more on the weekends. I did have one pleasant event........


San Francisco...... a beautiful place to visit.... no good bar-b-q anywhere!!!!

I will have additional pictures of the trip on future updates. Special thanks goes out to Kelly Frankeny, one of our friends from Taylor High School who has made the city by the bay her home for the last 9 years.

Bosnia Trip Update

I have already sent the recipes for my seasonings and sauces direct to the logistics (G-4) officers at Eagle Base, Tuzla, Bosnia. The staff in Bosnia seem eager and ready for this event. We plan on feeding an estimated 1,500 soldiers on July 4th.


This is my official Invitational Travel Orders (ITO's) from the Adjutant Generals Office. They are required for my entrance into the military bases.
(sorry for the poor resolution.....)

Taylor Publishing Balfour Company

We had a great time catering this evening for one of our best customers. We served well over 1,000 public school administrators from all over Texas. Bubba Cox and his "Cotton Pickers" band did their usual outstanding performance.



Brisket and Sausage with all the trimmings.....

Here is Marvin Vrana gently carving a brisket for the buffet line.

I have had some e-mail regarding the different types of pits we use to cook all these "mass quantities" of meat. In the 1940's my father used a common brick style pit to smoke his meats. When he built the new facility in the early 1970's, he designed a glazed brick style pit with fire boxes on both ends, large metal grills on both flat cooking surfaces and a meat smoker in the center. This pit still serves us today even after having tons of meat and tons of oak wood consumed over 30 years.

Here is an example of our Mikeska Brand Smoked Sausage cooling after being smoked in this pit.
